Ingredients

1 pound ground beef

1 medium onion, chopped

1 (10.75 oz) can cream of mushroom soup

3 cups frozen tater tots

1 cup frozen mixed vegetables (optional)

1 cup shredded cheddar cheese

Directions
  1. Cook beef and onion over medium heat until done. Pour off fat.
  2. Return meat to skillet and add vegetables and soup. Stir to combine.
  3. Spoon mixture into a 12×8 shallow baking dish and top with a layer of tater tots.
  4. Sprinkle shredded cheese over top and bake at 425º for 25 minutes or until potatoes are done and cheese is bubbly.
