Creme Fraiche Mashed Potatoes
The Ingredients
8 or more whole potatoes(number depends on how many people you’re serving)
2 Tablespoons Buttermilk
1 Pint Whipping Cream
1 Teaspoon Salt
1 Teaspoon Pepper
The Creme Fraiche
You can make the creme fraiche a day ahead. Use a clean plastic container or clean mason jar, pour in two tablespoons of buttermilk, then add a pint of whipping cream. Seal the jar with the lid and set it aside in the kitchen. Remember that this is a tasty recipe that’s good for a lot of other dishes including enchiladas and pastas.
The Mashed Potatoes
Cut up the potatoes in small cubes or slice them in a food processor. Move the potatoes over to a large pot of water and set it on high heat. Cover up the potatoes and let them cook for 25 minutes or until they start to boil. Lower the heat then drain. Move each potato into the ricer and press the potatoes through it and into the bowl. Do the same for each potato. You could also use a food mill instead. Once the super soft potatoes are in the bowl, add a pinch of seasoning, a cup of creme fraiche, and stir. Serve immediately while hot. Remember that if you’re pressed for time, you can whip up a box of instant mashed potatoes according to box instructions and add creme fraiche.
