We like to think of every day as National Chocolate Caramel Day. At least, we would if people didn’t keep hiding our chocolates away. We’re still willing to take the time to celebrate today’s holiday–that’s March 19th–in real style. Especially since we found a recipe that conveniently lets you use Rolo Candy Rolls. Frankly, we’d be pretty happy just handing out a bunch of those to celebrate this important day, but we’re very proud to have resisted the urge to go ahead and eat this recipe’s main ingredient. Ingredients
2 1/2 cups flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup sugar
1 cup brown sugar
1 cup margarine
2 teaspoons vanilla extract
2 eggs
48 Rolos chocolate-covered caramel candies
1 tablespoon granulated sugar
Directions
Start by preheating the oven to 375 degrees. In a large mixing bowl, add granulated sugar, brown sugar, margarine, eggs and vanilla extract. Mix together until well blended. Next, add the flour, unsweetened cocoa powder, baking soda and mix well. Place the dough in the refrigerator and chill for 30 minutes. After chilling, roll the dough into 1 inch balls. Place 1 Rolo in the center of each dough ball and form the dough ball around the majority of the piece of candy. Finally, roll each dough ball in sugar and placed on an ungreased cookie sheet. Bake for 7 to 10 minutes. After baking, let the cookies cool on the pan for 1 minute then take off and place on a cooling rack.
