March 21st is Maple Syrup Day, and we knew that we had some kind of healthy recipe to celebrate the holiday. Maybe we would’ve just gone with pancakes if the day fell on a weekend, but we didn’t want to send our precious darlings off to school on a sugar high. Then we remembered the incredible Blueberry Maple Oatmeal Smoothie. It’s a healthy and nutritious way to start the day–and contains two shots of maple syrup! Well, we’ll call those shots “tablespoons” here. No reason for our kids to start looking at us like we’re bartenders. [photo via flickr]
Anyway, this simple recipe from Lisa’s Kitchen combines antioxidant protection from the blueberries with the health benefits of the oats in a delicious smoothie that will make your taste buds sing. We have it for lunch sometimes, too, so it’s not too late to start celebrating Maple Syrup Day in style! Well, the oatmeal takes some prepping…
Ingredients
1/2 cup rolled oats
1 cup yogurt
1 cup blueberries (fresh or frozen)
2 tablespoons maple syrup
1 cup liquid (Milk or apple juice works well.)
Directions
- Mix the rolled oats into the yogurt and let sit in the fridge overnight.
- Puree everything in a food processor or blender.
And don’t forget that smoothies are very versatile drinks. Once you have the main ingredients, you can add just about anything you like. To dress up this recipe, you can add any fruit of your choosing, and use any juice for the cup of liquid. In the hot summer months, add frozen yogurt or a few ice cubes to make a cool treat. The sky’s the limit with smoothies, so use this basic recipe and let your imagination run wild!
