When you were little, have you ever thought that one day you will chase after a rainbow and see if there is a real pot of gold at the other end? Of course, I know there isn’t a pot of gold at the end, but I still want to chase one someday. It would be an adventure. Whenever it rains, my kids peer out the window in hopes to find a rainbow. Usually they get lucky in spotting a full one against the grey sky and sometimes it may be just half of one or some of the colors are barely there. If you don’t catch a few sights of rainbows this month, I have a solution that you can create, eat and enjoy.
Layered Rainbow Smoothie
Ingredients
Red Layer:
1 cup strawberries, remove stems
½ cup fat free vanilla Greek yogurt
3 ice cubes
Orange Layer:
¼ cup sliced nectarine
1 large orange in slices
½ cup fat free vanilla Greek yogurt
3 ice cubes
Yellow Layer:
2 Bananas
½ cup fat free vanilla Greek yogurt
A few ice cubes
Green Layer:
1/2 cup sliced kiwi fruit
½ cup fat free vanilla Greek yogurt
A few ice cubes
Blue (indigo) Layer:
2 Bananas
5 cubes of blue raspberry juice frozen into ice cubes
½ cup fat free vanilla Greek yogurt
Purple Layer:
¼ cup concord grapes
¼ cup blueberries
½ cup fat free vanilla Greek yogurt
3 ice cubes
How to make this yummy rainbow
- When layering the colors, you would start from the last color layer and work your way up. Doing this will show the order of colors as in the rainbow. So you would do Purple, Blue, Green, Yellow, Orange and Red.
- Take the first color, purple, and place all those ingredients into a blender. Blend together for a minute or until the ingredients have blended well.
- Spoon the mixture into tall glasses or into mason jars. Place into the freezer and allow it to chill for about 30 minutes to set.
- Repeat the steps with each color layer.
- Spoon the mixture on top of the first layer of color that has been chilling for a few minutes. Place back into the freezer.
- After layering the last color, top your smoothie off with some whipped cream if desired.
*As you can see, the ingredients are naturally colored by the fruit, so no dyes are being used, making these smoothies healthy. If you have any of the smoothie mixture leftover, you could use that to make rainbow popsicles.
